Smoked London Broil

Ingredients:
- London broil steak or skirt steak
- 4 English muffins
- 1/2 lb. butter
- 1 lg. green pepper, diced
- 1/2 lb. fresh mushrooms (or 1/2 can mushroom stems & pieces)
- 4 tsp. garlic, pressed
- Juice of 1/2 lime
- Full jigger cooking sherry
- Sprinkle oregano
- Dash liquid smoke

Preparation:
- Add all ingredients, except meat and muffins, to skillet. Saute over low heat, covered, for 15 minutes.
- Broil meat on oiled broiler until done. Remove. Rub in salt and pepper.
- Heat English muffins. Place meat on muffins and pour sauteed sauce over meat. Serve.
- Note: Marinate it overnight in a 2:1 mix of mojo criollo and olive oil. Take it out of the marinade, pat dry, brush more olive oil, and coat heavily with fresh cracked black pepper and a little bit of kosher salt.
- Note: Sear it on a very hot grill for 4 mins. per side. Remove and let rest for 20 mins under a foil tent.
- Slice very thin, like almost shaved, against the grain at a 45 degrees angle. The essential to london broil is a razor sharp knife. You may alternatively serve it with grilled veggies and mashed potatoes.
