The Mongolian Grill claims to be a derivative of the cooking techniques brought in by Genghis Khan when he was invading Central Asia. The army travelled light(popssibly that is one reason why Genghis Khan covered such vast regions) and therefore didn’t have space for many vessels. The soldiers cooked the meat, generally mutton or beef cut into thin slices, on their iron shields. Hot embers provided the heat. Today, the mongolian grill consists of round iron shield-like grills, though bigger in size, on which the thin stripes of meat are cooked quickly. The use of spices and vegetables is a recent additon to the way, and not entirely Mongolian in its origin
