Grilled Red Onions Recipe

Ingredients
- 2 pounds red onions
- ½ cup fresh parsley, chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 ½ teaspoon fresh rosemary, chopped
- 1 clove garlic, minced
- salt and pepper

Method
- Heat vinegar, garlic and rosemary in a sauce pan until hot. Don't boil. Let stand 20 minutes.
-  Warm oil in a separate pan. Slice onions into ½ inch slices. Lay out on a cookie sheet and brush both sides with oil. Sprinkle salt and pepper over onions.
- Grill over medium heat for 4-6 minutes. Let the onion slices slightly char. Remove from grill and separate into rings. Toss with vinegar mixture and parsley.
