Hawaiian Chicken With Rice Pilaf

Hawaiian Chicken & Rice Pilaf Preparation

Ingredients:

  • 1/2 cup soy sauce
  • 1/4 cup sherry
  • 3 cup unsweetened pineapple juice
  • 1/4 cup red wine vinegar
  • 1/3 cup sugar
  • 1 1/8 tsp. granulated garlic
  • Boneless chicken breast, enough marinade for 4 to 5 whole breastss.


Preparation:

  • Combine in a sealed container. Place boneless chicken breasts in marinade so they are covered. Marinate 36 hours in refrigerator, turning occasionally.
  • Great for camping, breasts may also be frozen after marinating.
  • Grill over hot coals, eight to 10 minutes per side. Serve with Rice Pilaf.
  • Prepare the rice pilaf with 1 cup long grain rice, 2 tbsp. butter, 1/4 cup finely chopped onion, 1 1/2 cup chicken broth, 1 bay leaf, 1 tbsp. minced parsley, 1 tsp. Basil with salt and pepper as per taste.
