Barbecue Chicken

If it’s a Saturday, it may be time for you to go out in the sun and barbecue a chicken for you and your family. But before you do that, you need to understand that grilling delicious chicken on the barbecue is as easy as catching it. It is one of those dishes which often fail to make a mark on your taste buds due to lack in the cooking expertise (believe it is required the least) and the improper way of cooking it.
The best barbecue chicken is the one which is cooked evenly on the grill. The first step is to defrost it properly and then marinade it evenly with the spice rub. The only aspect you need to take care on the grill is the temperature on which it is heated. Don’t cook on high temperature on the other hand put it on low temperature on the grill to get a tender and pleasant smoky skin. The sauce plays a vital role in the game. Put it until late in the barbecue which will not over roast the chicken. There are varieties of recipes for the barbecue chicken which vary with region. Decide on which way you want to have it, spicy or less spicy. Gather all the ingredients with you before taking things to the grill. Lets see the recipe of a home cooked barbecue chicken.

- 2 tablespoons vegetable oil
- 3 to 4 pounds chicken pieces
- 1/2 cup chopped onion
- 3 tablespoons butter
- 3/4 cup ketchup
- 1/3 cup vinegar
- 3 tablespoons brown sugar
- 1/4 cup water
- 2 teaspoons prepared mustard
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

First of all heat oil in a large pan over medium heat. Fry chicken until browned. Drain off fat and place chicken in a roasting pan or in a medium sized baking dish. In a saucepan, melt the butter; sauté chopped onion until tender.
Add remaining ingredients. Reduce heat and simmer for 10 to 15 minutes. Pour sauce over chicken and bake at 350° for 1 hour, or until chicken is tender and juices run clear. Baste occasionally. Oven barbecued chicken serves 4 to 6.
